What is Emulsion?

Emulsion is a mixture of two immiscible liquids (such as oil and water), one of which is dispersed in particulate form in the other. Milk is an example of an emulsion.

Types of emulsion

Emulsification/dispersion (typical example)

Preparing an emulsion is called emulsification or dispersion and a substance that produces an emulsifying action is called an emulsifier.

Emulsion particles range in size from 0.01 to 20 μm
